Health inspectors may conduct critical or follow-up inspections, due to the number of critical violations found during a regular inspection. A failing restaurant must have five critical violations on their most recent regular inspection and five critical violations on the previous regular inspection. Le Peep of Highlands Ranch is located at 7156 East County Line Road. The employee told us all violations have been corrected, before she locked us out. The restaurant owner refused to do an interview, so we stopped at the restaurant to take a look, but an employee stopped us at the front door. Inspectors also found cross contamination during both inspections in which raw meat was stored above cooked food. The reports also said, an employee was observed handling the trash can then clean dishes without washing their hands.
